Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the chopped salmon with breadcrumbs, grated Parmesan, green onions, minced garlic, egg, Dijon mustard, dill, salt, and pepper. Mix well.
  • Form the mixture into meatballs about one inch in diameter.
  • Place the meatballs on the prepared baking sheet, leaving space between each.
  • Lightly spray the meatballs with olive oil.

Cooking

  • Bake the meatballs in the preheated oven for 15-20 minutes or until light golden brown and firm.
  • While the meatballs are baking, blend the avocado, Greek yogurt, lime juice, garlic, salt, and pepper in a blender until smooth.
  • Once baked, let the meatballs cool slightly and serve warm with the creamy avocado sauce drizzled on top, garnished with cilantro.
