  • 2 ripe bananas, mashed until creamy and sweet Use very ripe bananas for the best flavor.
  • 1/2 cup unsalted butter, softened Make sure it's at room temperature.
  • 3/4 cup granulated sugar
  • 2 large eggs Adds richness.
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking soda Makes the bread rise.
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon Adds warmth.
  • 1/2 cup sour cream Can substitute with Greek yogurt.
  • 1 1/2 cups fresh or frozen blueberries If frozen, fold them in while still frozen.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  • In a bowl, whisk together the flour, baking soda, salt, and cinnamon until combined.
  • In another bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla and mashed bananas.
  • Add the dry ingredients to the banana mixture, alternating with the sour cream. Stir gently to avoid overmixing.
  • Fold in the blueberries gently to prevent crushing.
  • Pour the batter into the prepared loaf pan and smooth the top.

Baking

  • Bake for 55-60 minutes or until a toothpick inserted comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Serve warm with butter or whipped cream. Experiment with add-ins like nuts or chocolate chips for variety.
