For the raspberry mousse

  • 1 cup fresh raspberries bursting with flavor to elevate the mousse
  • 1/4 cup granulated sugar for the raspberry filling, balancing the tartness
  • 1 tsp lemon juice brightening the raspberry flavor
  • 1 tsp gelatin stabilizing the mousse
  • 2 tbsp water to dissolve the gelatin
  • 1 cup heavy cream for a luscious mousse

For the ganache topping

  • 1/2 cup dark chocolate chips for a rich ganache topping
  • 1/4 cup heavy cream for preparing the ganache

Instructions
 

Baking the Cake

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and sugar.
  • In another bowl, whisk together the milk, melted butter, eggs, and vanilla extract until well combined.
  • Gradually mix the wet ingredients into the dry, stirring gently until the batter is smooth.
  • Pour the chocolate batter into a greased 9-inch round cake pan and bake for 20-25 minutes.
  • Once baked, let the cake cool completely on a wire rack.

Preparing the Raspberry Mousse

  • In a blender, combine the fresh raspberries, sugar, and lemon juice. Blend until smooth.
  • Strain the mixture through a fine mesh sieve to remove any seeds.
  • In a small bowl, dissolve the gelatin in the water.
  • Stir the gelatin into the raspberry purée until combined.
  • In another bowl, whip the heavy cream until soft peaks form.
  • Gently fold the raspberry mixture into the whipped cream to make the mousse.

Combining Layers

  • Spread the raspberry mousse evenly over the cooled cake.
  • Refrigerate for at least 2 hours to allow the mousse to set.

Making the Ganache

  • In a small saucepan, heat 1/4 cup of heavy cream over low heat until it begins to simmer.
  • Pour the hot cream over the dark chocolate chips and let sit for a few minutes.
  • Stir until the mixture is smooth and glossy.
  • Pour the ganache over the set mousse layer and spread evenly.

Finishing Touches

  • Place the cake back in the refrigerator for another hour to allow the ganache to set.
  • Slice the cake elegantly and serve cold.

Notes

For an elegant garnish, serve with fresh raspberries or chocolate shavings.
