Instructions
 

Preparation

  • Preheat your oven to 325°F (163°C).
  • Prepare a 9-inch springform pan: Lightly grease it and line the bottom with parchment paper.
  • Combine chocolate cookie crumbs and melted butter in a mixing bowl. Press this evenly into the bottom of the prepared springform pan.
  • Bake the crust for 10 minutes and let it cool.
  • In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and fluffy.
  • Add the vanilla extract and melted semisweet chocolate chips; mix until fully incorporated.
  • Add the eggs one at a time, mixing well after each addition. Pour the cheesecake batter into the cooled crust, spreading it evenly.

Baking

  • Bake the cheesecake for 50-55 minutes until the edges are set and the center is slightly jiggly.
  • Turn off the oven and cool the cheesecake with the door slightly cracked for about an hour.
  • Refrigerate the cheesecake for at least 4 hours or overnight.

Topping

  • In a medium saucepan, combine the chopped pecans, shredded coconut, sweetened condensed milk, and heavy cream. Cook over medium heat, stirring constantly until thickened, about 5-7 minutes.
  • Remove from heat and stir in the remaining melted semisweet chocolate chips. Allow to cool before spreading it evenly over the chilled cheesecake.
