For the Marinade

  • 2 tablespoons honey Balances the saltiness of soy sauce.
  • 1 tablespoon rice vinegar Adds acidity to the glaze.

For the Fish

  • 4 pieces cod fillets Fresh and flaky, the star ingredient.

Preparation

  • Whisk together the soy sauce, grated ginger, minced garlic, honey, rice vinegar, and sesame oil in a bowl.
  • Pat the cod fillets dry with a paper towel and place them in a shallow dish. Pour half of the marinade over them.
  • Allow the cod to marinate for about 30 minutes.

Cooking

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Transfer the marinated cod onto the prepared baking sheet. Pour the remaining marinade into a saucepan to simmer and reduce.
  • Bake the cod for 12-15 minutes or until cooked through and flakes easily with a fork.

Serving

  • Serve the glazed cod over jasmine rice with a side of steamed vegetables.

Notes

For the best results, use fresh ingredients, pat the cod dry, avoid overcooking, and don't skip marinating. This recipe is versatile and can be adapted with other seafood or ingredients.
