Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  • In a large mixing bowl, beat the softened butter and sugar using an electric mixer until light and fluffy (about 3-4 minutes).
  • Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.

Batter Mixing

  • In a separate bowl, combine the sour cream, peach puree, and honey. Gradually add this mixture to the butter-sugar mix, mixing on low speed until just combined.
  • Gradually add the dry ingredients to the wet mixture, mixing gently until fully incorporated.
  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.

Baking

  • Bake for 18-22 minutes, or until a toothpick comes out clean when inserted into the center.
  • Let cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Frosting Preparation

  • For the cream cheese frosting, beat together the softened cream cheese and butter until smooth and creamy.
  • Gradually add the powdered sugar until combined, then stir in the vanilla extract, honey, and optional peach puree.
