Ingredients
  

For the brownie bites

  • 1/2 cup unsalted butter, melted velvety and rich
  • 1 cup granulated sugar sweet and crystalline
  • 1/2 cup packed brown sugar deep and caramel-like
  • 2 large eggs fresh and wholesome
  • 1 teaspoon vanilla extract aromatic and sweet
  • 1/3 cup all-purpose flour fine and soft
  • 1/3 cup unsweetened cocoa powder dark and chocolatey
  • 1/4 teaspoon salt to balance the sweetness
  • 1/4 teaspoon baking powder for a little rise
  • 1/2 cup mini chocolate chips tiny bursts of chocolate love

For the cookie dough frosting

  • 1/2 cup unsalted butter, softened creamy and smooth
  • 1/2 cup packed brown sugar a hint of molasses flavor
  • 1 cup powdered sugar sweet and fluffy
  • 1 teaspoon vanilla extract aromatic richness
  • 2 tablespoons milk for a silky texture
  • 1/2 cup mini chocolate chips adding extra decadence

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and lightly grease a mini muffin pan.
  • In a large bowl, mix the melted butter, granulated sugar, and brown sugar until smooth.
  • Add the eggs and vanilla extract, mixing until well combined.
  • In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  • Fold the dry ingredients into the wet mixture until just combined.
  • Gently fold in the mini chocolate chips.
  • Spoon the batter into the prepared mini muffin pan, filling each cup two-thirds full.

Baking

  • Bake for 10-12 minutes, or until a toothpick inserted comes out with a few moist crumbs.
  • Let the brownie bites cool completely in the pan.

Frosting

  • In a bowl, beat together softened butter and brown sugar until creamy.
  • Gradually mix in powdered sugar and vanilla extract until smooth.
  • Add milk to achieve desired consistency and fold in mini chocolate chips.
  • Once the brownie bites are cool, apply the frosting on top.

Notes

If you like, you can use coconut oil for a dairy-free option, or swap out flour for whole wheat flour to add fiber.
