For the Custard Filling

  • 1 cup milk The base for your creamy custard.
  • 0.25 cups granulated sugar Sweetens the custard mixture harmoniously.
  • 2 tbsp cornstarch Thickens the custard for a delightful consistency.
  • 1 tsp vanilla extract Adds aroma and enhances flavor.
  • 0.5 cups fresh raspberries, mashed Brightens the buns with fresh, tart notes.

For Topping

  • 2 tbsp sugar To sprinkle atop the buns for a touch of sweetness.

Preparation of Dough

  • In a large mixing bowl, blend the flour, sugar, yeast, and salt together.
  • Pour in the warm milk, softened butter, and egg. Mix and knead the combination for about 10 minutes until the dough is smooth and elastic.
  • Place the dough into a greased bowl, cover it with a clean towel, and let it rise in a warm environment for about 1 hour.

Cooking the Custard

  • While waiting for the dough to rise, heat the milk in a saucepan over medium heat until it’s hot but not boiling.
  • In a separate bowl, whisk together the egg yolks, sugar, and cornstarch.
  • Gradually pour the hot milk into the yolk mixture while whisking continuously.
  • Return the custard mixture to the saucepan and cook over low heat until it thickens. Remove from heat, stir in the vanilla extract, and set it aside to cool.

Assembling the Buns

  • After the dough has risen, punch it down gently and divide it into equal pieces.
  • Roll each piece out into a circle, add a generous spoonful of custard in the center, then pinch the edges to seal them tightly.
  • Place the filled buns onto a baking tray lined with parchment paper and let them rise for another 30 minutes.

Topping and Baking

  • Preheat your oven to 350°F (175°C).
  • Once the buns have risen, top each with the mashed raspberries and a light sprinkle of sugar.
  • Place the buns in the preheated oven and let them bake for about 18-20 minutes or until they are golden brown.
  • Allow them to cool slightly before serving.

Notes

These buns pair excellently with coffee or tea for brunch. For a tasty treat, serve warm with vanilla ice cream. Garnish with fresh mint.
