For the raspberry mousse

  • 1 tsp lemon juice Brightens the flavor.
  • 1.5 tsp gelatin powder Helps set the mousse.
  • 2 tbsp water Used to dissolve the gelatin.
  • 0.5 cups heavy cream, whipped Adds fluffiness to the mousse.

Instructions
 

Preparation

  • Preheat the oven to 325°F (163°C).
  • In a mixing bowl, combine the crushed graham crackers, melted butter, and sugar until well mixed. Press firmly into the bottom of a springform pan. Bake for 10 minutes, then let cool.
  • In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the sour cream and mix gently. Incorporate the eggs, one at a time.
  • Pour the cheesecake batter over the cooled crust and bake for about 40 minutes until the center is slightly jiggly. Cool at room temperature.
  • In a blender, blend fresh raspberries, 1/4 cup sugar, and lemon juice until smooth. Strain to remove seeds.

Mousse Preparation

  • Dissolve gelatin in water and stir into the raspberry puree.
  • Whip heavy cream until soft peaks form, then fold it into the raspberry mixture.
  • Spread the mousse over the cooled cheesecake and smooth it out. Refrigerate for at least 4 hours until set.
  • Garnish with fresh raspberries just before serving.
