Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, toss the carrots with olive oil, salt, pepper, and thyme until they are well coated.
  • Spread the carrots out in a single layer on the prepared baking sheet.

Cooking

  • Roast the carrots in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized.
  • While the carrots are roasting, prepare the whipped feta dip by combining feta cheese, cream cheese, olive oil, lemon juice, and minced garlic in a food processor.
  • Blend until smooth and creamy, and season the dip with salt and pepper to taste.
