Add-ins

  • 1/2 cup shelled pistachios, finely chopped Provides a delightful crunch.

Instructions
 

Preparation

  • In a medium saucepan, combine heavy cream, whole milk, sugar, honey, and salt. Heat over medium heat, stirring until the mixture is warm and sugar is dissolved (about 5 minutes).
  • Remove from heat; stir in rosewater and vanilla extract. Allow mixture to cool to room temperature.

Churning

  • Pour the cooled mixture into an ice cream maker and churn according to manufacturer's instructions (about 20-25 minutes).
  • Halfway through churning, add the finely chopped pistachios.
  • If desired, add pink food coloring and gently fold it into the gelato.

Freezing

  • Transfer the gelato into an airtight container and freeze for at least 4 hours or until firm.

Serving

  • Serve the gelato in bowls and enjoy the refreshing floral and nutty flavors.

Notes

For optimal texture, consume within the first week. If using an ice cream maker is not an option, pour the mixture into a freezer-safe container and stir every 30 minutes for 2-3 hours.
