Ingredients
  

For the Batter

  • 1 cup Sourdough Discard Gives the crumpets a lovely flavor.
  • 1 cup All-Purpose Flour Forms the base of the batter.
  • 1 tsp Baking Powder Helps crumpets rise for a light texture.
  • 0.5 cup Water Achieves the ideal batter consistency.
  • 0.5 tsp Salt Enhances the flavors.

For Cooking

  • 2 tbsp Butter For greasing the crumpet rings.

Preparation

  • In a bowl, whisk together the flour, baking powder, and salt until well combined.
  • Add your sourdough discard and water; mix gently until the batter reaches a heavy cream consistency. Let the mixture rest for 5 minutes.

Cooking

  • Heat a pan over medium-low heat and grease your crumpet rings generously with butter.
  • Place the rings in the warm pan and test with a small drop of water; when it sizzles, it’s ready for batter.
  • Ladle the batter into the rings, filling them halfway, then cover with a lid. Cook for 10-20 minutes, until the tops appear dry with bubbles formed.
  • Once set, carefully remove the rings and briefly flip the crumpets to brown the tops.

Notes

Serve warm with butter, honey, cream cheese, or fresh fruits. These crumpets can be stored in an airtight container in the fridge for up to 3 days.
