Instructions
 

Preparation

  • Preheat your oven to 325°F (165°C). Line an 8x8-inch baking dish with parchment paper or grease it.
  • In a medium bowl, mix graham cracker crumbs and 1/4 cup sugar. Pour in the melted butter and combine until it resembles wet sand. Press firmly into the bottom of the prepared dish.
  • Bake the crust for 8-10 minutes until golden brown. Let it cool slightly.
  • Combine fresh raspberries, 2 tablespoons sugar, and lemon juice in a saucepan. Cook over medium heat, stirring occasionally, until thickened. Let it cool.

Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream.
  • Pour the cheesecake mixture over the cooled crust. Drizzle the raspberry puree on top and swirl with a knife.

Baking

  • Bake for 35-40 minutes until the center is set but still jiggles slightly.
  • Cool at room temperature for 10 minutes, then refrigerate for at least 3 hours or overnight before serving.
  • Cut into squares or bars and serve with extra raspberries for garnish.

Notes

Ensure the cream cheese is softened before use. Control the baking time for a creamy texture. Cool gradually to prevent cracks.
