Ingredients
  

For the cheesecake mixture

  • 8 oz cream cheese, softened Ensure it is at room temperature for easier mixing.
  • 1/2 cup powdered sugar For a sweet delicate touch.
  • 1/2 cup white chocolate chips, melted This creates a rich, creamy backdrop.
  • 1/2 cup crushed graham crackers Lending a crunchy texture.

For coating

  • 1/2 cup white chocolate chips, for coating To envelop each ball in sweetness.

Instructions
 

Preparation

  • In a mixing bowl, combine softened cream cheese with powdered sugar, and beat until smooth.
  • Gently fold in melted white chocolate, then add crushed graham crackers and raspberry puree until well combined.
  • Roll the mixture into small balls, about an inch in diameter, and refrigerate for at least 1 hour.

Coating

  • Melt the remaining white chocolate chips in a microwave-safe bowl until smooth.
  • Dip each chilled cheesecake ball into the melted white chocolate to coat, using a fork to lift out and allow excess to drip off.
  • Set the coated balls onto parchment paper, and return to the refrigerator to chill until the coating hardens, about 30 minutes.

Notes

Great for celebrations or a sweet treat at home. For added flair, serve on a decorative platter garnished with fresh raspberries or a drizzle of raspberry sauce.
